Spinach & Strawberry Salad

Spinach & Strawberry Salad
(Serves 6)

Ingredients:

1 pound – Fresh Spinach
2 cups - Sliced Strawberries
¼ Cup – Fresh Chopped Tarragon
1/4 – Small Red Onion, thinly sliced
2 TBSP – Balsamic Vinegar
1 TBSP – Honey
1 ½ TBSP – Olive Oil
½  Tsp – Lemon Juice
½  Tsp –  Dried Tarragon
½  Tsp – Kosher Salt
½  Tsp – Black Pepper
1 TBSP – Water
½  Cup – Sliced Almonds

Directions:

  1. In a large bowl, combine spinach, strawberries, fresh tarragon & onion.
  2. Toss to mix well and set aside.
  3. In a jar with a lid, combine the vinegar, honey, olive oil, lemon juice, dried tarragon, salt, pepper & water.
  4. Screw lid on tightly and shake to mix well.
  5. Pour dressing over salad just before serving
  6. Garnish with almonds and serve.

Makes a great side to compliment our Balsamic Blackberry  Chicken or our Herb Crusted Flank Steak.
