Ingredients
  1. 3 c Orzo Pasta, boiled in water 10 min, or just until soft.
  2. 1½ c chopped scallions
  3. 1½ c drained and chopped Kalamata olives
  4. 1½ c crumbled feta cheese
  5. ¾ c fresh chopped dill
  6. ¾ c olive oil
  7. ½ c plus 1 tbsp fresh lemon juice
  8. 1 tbsp lemon zest
  9. ¾ c red wine vinegar
  10. 1 tbsp Kosher salt
  11. 1 tbsp black pepper
Instructions
  1. Rinse pasta with cold water.
  2. Combine the orzo, onions, olives, feta, and dill in a large bowl.
  3. Set aside.
  4. Whisk together the oil, lemon juice and zest, vinegar, salt and pepper in a bowl. Pour 1/2 of dressing over the pasta mixture and stir to coat all over.
  5. Toss with the remaining dressing just before serving.
