Ingredients
  1. Nonstick Cooking Spray
  2. 1 Box yellow cake mix (1 pound 2.25 ounces)
  3. 5 cups Fresh or frozen rhubarb, coarsely chopped
  4. 1 cup Sugar
  5. 1/2 Tsp Ground cinnamon
  6. 1 Box powdered raspberry gelatin (3 ounce box)
  7. 1 Lemon, zested
  8. 1/2 cup Low fat yogurt based spread or butter, melted
Instructions
  1. Spray 9 x 13” baking dish with nonstick cooking spray.
  2. Spread dry cake mix in bottom of baking dish.
  3. Spread rhubarb over top of cake mix
  4. Sprinkle sugar, cinnamon & gelatin over rhubarb.
  5. Scatter lemon zest on top & drizzle evenly with melted spread.
  6. Preheat oven to 350 F.
  7. Bake, uncovered, for 1 hour until top is golden brown & crisp.
