National S’mores Day

Layered Strawberry Gelatin Salad Recipe

This light, refreshing crowd-pleaser is not only delicious but also colorful on a buffet or the dinner table. This salad can’t be frozen, but it can be prepared 2 days ahead.

Layered Strawberry Gelatin Salad

Ingredients
  1. 1 18-ounce box Strawberry gelatin (Jell-O)
  2. 2 10-ounce boxes Frozen strawberries
  3. 1 8-ounce can Crushed pineapple, drained
  4. 2 ripe Bananas, mashed
  5. 1/2 cup Nonfat sour cream
Instructions
  1. Bring 2 cups water to a boil and add 1 package of Jell-O
  2. Add the frozen strawberries, pineapple and bananas
  3. Put half of the mixture in a 9×13-inch baking dish
  4. Chill in the refrigerator for 30 to 60 minutes (leave the other half of the mixture out on the counter)
  5. Remove the baking dish from the refrigerator and spread with sour cream
  6. Pour the remaining mixture over the sour cream
  7. Cover the dish with plastic wrap and chill for 8 to 12 hours
  8. Remove the plastic wrap and serve

Go ahead and make three batches at a time of this dreamy dessert: one for tonight, one for a friend, and one to serve from the freezer to your unexpected company. Nothing beats the delicious combination of chocolate and peanut butter.

Dreamy Peanut Butter and Chocolate Cream Pie

Ingredients
  1. 1 cup Chocolate syrup
  2. 1 Store-bought graham cracker crust
  3. 1 1/2 cups (12 ounces) Nonfat cream cheese
  4. 1 1/2 cups Sugar
  5. 1 1/2 cups Low-fat nondairy whipped topping
  6. 1 1/2 cups Peanut butter
  7. 1/4 cup (1 ounce) Chopped peanuts
Instructions
  1. Spread 1/2 cup chocolate syrup into the bottom of your graham cracker crust.
  2. In a large bowl, blend the cream cheese & sugar together with a handheld electric mixer, on medium speed, until fluffy.
  3. Add the whipped topping & peanut butter and mix well.
  4. Pour the mixture into the crust, mounding it slightly in the middle.
  5. Drizzle the remaining 1/2 cup chocolate syrup over top and sprinkle with nuts.
  6. Freeze overnight.
  7. Serve frozen.
Notes
  1. To freeze
  2. Cover with foil, forming a dome to prevent smashing the pie, and place in a deep rigid container with a lid. Label, date and freeze for up to 3 months.

Ingredients
  1. Nonstick Cooking Spray
  2. 1 Box yellow cake mix (1 pound 2.25 ounces)
  3. 5 cups Fresh or frozen rhubarb, coarsely chopped
  4. 1 cup Sugar
  5. 1/2 Tsp Ground cinnamon
  6. 1 Box powdered raspberry gelatin (3 ounce box)
  7. 1 Lemon, zested
  8. 1/2 cup Low fat yogurt based spread or butter, melted
Instructions
  1. Spray 9 x 13” baking dish with nonstick cooking spray.
  2. Spread dry cake mix in bottom of baking dish.
  3. Spread rhubarb over top of cake mix
  4. Sprinkle sugar, cinnamon & gelatin over rhubarb.
  5. Scatter lemon zest on top & drizzle evenly with melted spread.
  6. Preheat oven to 350 F.
  7. Bake, uncovered, for 1 hour until top is golden brown & crisp.

Ingredients
  1. Cookie
  2. 2/3 Cups - Granulated Sugar
  3. 1 Cup - Butter
  4. ½ Tsp - Almond Extract
  5. 2 Cups - All Purpose Flour
  6. ½ Cup - Raspberry Jam
  7. Topping
  8. 1Cup - Powdered Sugar
  9. 1 ½ Tsp -  Almond Extract
  10. 2 TBSP - Water
Instructions
  1. In a large bowl combine Sugar, Butter & ½ Tsp of Almond Extract
  2. Beat on medium speed until creamy
  3. Reduce speed & add Flour
  4. Beat until well mixed ~ about 2 – 3 minutes.
  5. Shape dough into 1" balls, place on cookie sheet 2"  apart
  6. With your thumb, make an indent in center of each cookie
  7. Fill with ¼ Tsp Jam (edges may crack slightly)
  8. Bake 14 – 18 minutes on 350
  9. Cool completely
Topping Instructions
  1. Mix with wire whisk until smooth.
  2. Drizzle over cooled cookies

  1. Nonstick Cooking Spray
  2. 3 Cups  All Purpose Flour
  3. 1 Cup  Dark Brown Sugar, packed
  4. 1 Cup Granulated Sugar
  5. 4 Tsp Ground Cinnamon
  6. ¾ Cup Canola Oil
  7. 1 Tsp  Kosher Salt
  8. ½ Tsp Ground Ginger
  9. 1 Tsp Baking Soda
  10. 1 Tsp Baking Powder
  11. 2  Granny Smith Apples, peeled sliced into bite sized pieces
  12. 1 Cup Buttermilk
  13. ¼ Cup Nonfat Egg Substitute
Instructions
  1. Preheat oven to 350 degrees
  2. In a large bowl, combine flour, brown sugar, granulated sugar, ½ of the cinnamon, canoloa oil, salt & ginger.
  3. Transfer 1 ½ cups of this mixture into a small bowl & add remaining cinnamon to it. Stir until incorporated. Set aside for the topping
  4. Add baking soda, baking powder, apples, buttermilk & egg substitute to the flour mixture, stirring until just combined. (do not over-mix)
  5. Pour into prepared baking dish. (sprayed with nonstick)
  6. Sprinkle the reserved topping over the apple mixture.
  7. Bake for 1 ½ hours, until cake is set and topping is golden brown.
