Baby Spinach Salad with Fresh Mango-Lime Dressing
Pairs well with Dream Dinners Thai Ginger Steaks, Caribbean Pork Roast and Island Chili Steaks.

Ingredients
  1. 12 Cups Baby spinach, pre-washed & dried
  2. ½ cup Cashews, roasted, unsalted pieces
Dressing
  1. 2 ½ cups Mango, peeled, seeded, diced
  2. ¼ cup Sweet red bell pepper, minced
  3. ¼ cup Fresh orange juice
  4. 2 Tbsp. Fresh lime juice
  5. 3 Tbsp. Red onion, minced
  6. 2 Tbsp. Cilantro leaves, chopped
  7. 2 Tbsp. Brown sugar, packed
  8. ¼ tsp. Salt
  9. 1/8 tsp. Black pepper
Instructions
  1. Place all dressing ingredients in bowl and combine well.
  2. Toss spinach with dressing, serve garnished with cashews.

Orzo Salad for 25 Guests

Ingredients
  1. 3 c Orzo Pasta, boiled in water 10 min, or just until soft.
  2. 1½ c chopped scallions
  3. 1½ c drained and chopped Kalamata olives
  4. 1½ c crumbled feta cheese
  5. ¾ c fresh chopped dill
  6. ¾ c olive oil
  7. ½ c plus 1 tbsp fresh lemon juice
  8. 1 tbsp lemon zest
  9. ¾ c red wine vinegar
  10. 1 tbsp Kosher salt
  11. 1 tbsp black pepper
Instructions
  1. Rinse pasta with cold water.
  2. Combine the orzo, onions, olives, feta, and dill in a large bowl.
  3. Set aside.
  4. Whisk together the oil, lemon juice and zest, vinegar, salt and pepper in a bowl. Pour 1/2 of dressing over the pasta mixture and stir to coat all over.
  5. Toss with the remaining dressing just before serving.

Ingredients
  1. 12 cups mixed greens, washed and dried
  2. 2 c arugula, washed and dried
  3. 5 med tomatoes, cut in wedges
  4. 2 med carrots, chopped
  5. 3 celery stocks, chopped
  6. ½ red onion, sliced thinly
  7. 1 c marinated artichoke hearts, drained and slightly chopped
  8. 1 14.5 oz can garbanzo beans, drained
  9. 1 cup shredded Parmesan cheese
  10. 2 cups garlic croutons
  11. 2 cups of your favorite Italian dressing
Instructions
  1. Place greens and arugula in large serving bowl.
  2. Top with the vegetables and beans, toss lightly.
  3. Top with cheese and croutons.
  4. Toss with dressing just before serving or serve on the side.

Spinach & Strawberry Salad

Ingredients
  1. 1 pound - Fresh Spinach
  2. 2 cups - Sliced Strawberries
  3. ¼ Cup - Fresh Chopped Tarragon
  4. 1/4 - Small Red Onion, thinly sliced
  5. 2 TBSP - Balsamic Vinegar
  6. 1 TBSP - Honey
  7. 1 ½ TBSP - Olive Oil
  8. ½  Tsp - Lemon Juice
  9. ½  Tsp -  Dried Tarragon
  10. ½  Tsp - Kosher Salt
  11. ½  Tsp - Black Pepper
  12. 1 TBSP - Water
  13. ½  Cup - Sliced Almonds
Instructions
  1. In a large bowl, combine spinach, strawberries, fresh tarragon & onion.
  2. Toss to mix well and set aside.
  3. In a jar with a lid, combine the vinegar, honey, olive oil, lemon juice, dried tarragon, salt, pepper & water.
  4. Screw lid on tightly and shake to mix well.
  5. Pour dressing over salad just before serving
  6. Garnish with almonds and serve.
Notes
  1. Makes a great side to compliment our Balsamic Blackberry Chicken or our Herb Crusted Flank Steak.

Lemon Rice Pilaf

This dish compliments our Salmon and Crab Pinwheels, Caribbean Pork Roast with Honey Mustard Sauce or our Dijon Honey Lime Grilled Salmon.

Ingredients
  1. 5 Tbsp olive oil
  2. 1 ½ onions, chopped
  3. 3 Cups uncooked long-grain rice
  4. 5 Cups  chicken broth
  5. ½ Cup  freshly squeezed lemon juice
  6. 1 ½ Tbsp lemon zest
  7. ½ Tsp kosher salt
  8. ¾ Tsp black pepper
Instructions
  1. Heat Olive Oil in large saucepan over medium heat.
  2. Add onions and saute until tender and fragrant. (about 5 minutes)
  3. Add rice and saute 2 minutes more.
  4. Raise heat to high and add chicken broth, lemon juice, lemon zest, salt and pepper.
  5. Bring to boil, stirring occasionally.
  6. Reduce heat to low, cover and cook about 20 minutes, until rice is tender and liquid is absorbed.
  7. Remove from heat, let stand for 5 minutes, fluff with fork and serve.

Stir-Fried Sugar Snap Peas with Mushrooms

Ingredients
  1. 3 Tbsp. sesame oil
  2. 1 cup button mushrooms, sliced ¼” thick
  3. 4 cups sugar snap peas, fresh, cleaned of strings & stems
  4. 2 Tbsp. water
  5. 2 tsp. lite soy sauce
  6. 2 tsp. fresh garlic, minced
  7. ¼ tsp. salt
  8. ¼ tsp. black pepper
Instructions
  1. Combine water, soy sauce, garlic, salt & pepper. Set aside.
  2. Heat oil in large frying pan or wok until hot.
  3. Add mushrooms, stir-fry 2 minutes to brown. Add sugar peas and water/soy sauce mixture.
  4. Stir-fry 4-6 minutes or until tender.
Notes
  1. Nutritional info per 2/3-cup serving: 74 calories, 2 g protein, 6 g carbohydrate, 5 g fat (I g saturated, 2 g monounsaturated, 2 g polyunsaturated), 2 g fiber, 172 mg sodium

Holiday Rice Salad

Ingredients
  1. 3 cups wild rice
  2. 6 cups brown rice
  3. 4 large Braeburn Apples cut in 1 inch chunks
  4. 2 large red bell peppers
  5. 2 cups dried cranberries
  6. 2 cups pecan pieces
  7. 1 cup chopped red onion
  8. ¾ cup Balsamic Vinegar
  9. 1 cup olive oil
  10. 5 tsp Kosher Salt
  11. 3 tsp black pepper
  12. 2 Tbl lemon zest
  13. 3 Tbl lemon juice
Instructions
  1. Bring wild rice to boil with 3 cups water, cover and simmer 45 min.
  2. Bring brown rice and 12 cups water to boil, cover and simmer 30 min.
  3. Chill uncovered in refrigerator 1 hour.
  4. While rice is cooking and chilling, chop apples and vegetables.
  5. Whisk last 6 ingredients, set a side.
  6. Toss rice with fruit, vegetables and pecans.
  7. Toss with 1/2 of the whisked dressing.
  8. Just before serving drizzle with remaining dressing.

Ingredients
  1. ½ lb. asparagus, trimmed, cut into 1-inch pieces
  2. 1 can (15.5 ounces) white beans (cannellini), drained and rinsed
  3. ½ cup grape tomatoes, halved
  4. ¼ cup red onion, finely diced
  5. 2 tbsp extra-virgin olive oil
  6. 1 tbsp lemon zest, grated
  7. 1 tbsp lemon juice
  8. ½ tsp kosher salt
  9. 3 cups baby arugula
  10. Freshly ground black pepper, to taste
Instructions
  1. Bring 4 cups of lightly salted water to a boil in a large, deep skillet; add asparagus.
  2. Blanch 2 minutes, or until crisp-tender.
  3. Drain; refresh under cold water and place in a medium bowl.
  4. Add beans, tomatoes, onion, oil, lemon zest, lemon juice, salt, and pepper to taste; toss to combine.
  5. Lay arugula on top of salad
