Thumbprint Almond Shortbread

This delicious shortbread cookie recipe came to us from Stephanie Allen, Dream Dinners Co-founder as a family recipe.

Thumbprint Almond Shortbread

Ingredients
  1. Cookie
  2. 2/3 Cups - Granulated Sugar
  3. 1 Cup - Butter
  4. ½ Tsp - Almond Extract
  5. 2 Cups - All Purpose Flour
  6. ½ Cup - Raspberry Jam
  7. Topping
  8. 1Cup - Powdered Sugar
  9. 1 ½ Tsp -  Almond Extract
  10. 2 TBSP - Water
Instructions
  1. In a large bowl combine Sugar, Butter & ½ Tsp of Almond Extract
  2. Beat on medium speed until creamy
  3. Reduce speed & add Flour
  4. Beat until well mixed ~ about 2 – 3 minutes.
  5. Shape dough into 1" balls, place on cookie sheet 2"  apart
  6. With your thumb, make an indent in center of each cookie
  7. Fill with ¼ Tsp Jam (edges may crack slightly)
  8. Bake 14 – 18 minutes on 350
  9. Cool completely
Topping Instructions
  1. Mix with wire whisk until smooth.
  2. Drizzle over cooled cookies
