We all know the month of September can be hectic. Kids are heading back to school. Fall sports and after-school activities are starting up. While getting into the routine of it all after the slow months of summer, it’s easy to feel like each member of the family is going in a different direction.
The 30 Day Dinner Challenge gives you the opportunity to focus on spending time as a family around the dinner table during this busy season.

Monday:
Start off your week with a no-hassle dinner. All you have to do to take the Firehouse Three Cheese Pasta from August’s menu from fridge to table is pop it in the oven. Serve with Finishing Touch Garlic Bread and a Caesar salad.
Tuesday:
Try something new by fixing the Teriyaki Chicken recipe from the Dream Dinners cookbook.
You’ll need:
1 cup lite soy sauce
1/2 cup sugar
1/2 cup white wine
Zest of 1 orange
1 tsp grated fresh ginger
1 tsp minced garlic
1/4 tsp red pepper flakes
6 4-ounce boneless, skinless chicken breasts
Directions:
- In a bowl, combine all the ingredients except the chicken and stir until incorporated. Pour the marinade into a resealable freezer bag and add the chicken breasts. Marinade over night.
- Prepare a hot grill or broiler or heat and spray a nonstick pan with vegetable oil over high heat. Cook the chicken for 10 minutes per side.
- Meanwhile, boil the marinade in a saucepan for 5 minutes. Serve with chicken over rice and mandarin oranges.
Wednesday:
For an easy week-night dinner the whole family will love, serve Crispy Salsa Ranch Chicken from August’s menu and Finishing Touch Chipotle Maple Corn. These kid-friendly chicken tenders cook in just 20 minutes.
Thursday:
Treat your kids to a meal they’re sure to love with this Cheeseburger Macaroni Skillet dish from Dinners, Dishes, and Desserts.
Friday:
Turn your Sweet Cider BBQ Chicken from August’s menu into easy chicken burgers that are perfect for a Friday night tailgate. Cook the chicken on the grill. Then top hamburger buns with a slice of cheese and toast on the grill or broil until cheese is melted. Add your favorite hamburger toppings and serve.
Saturday:
Fix the Rio Grande Chicken Fajitas from August’s menu and set out a buffet of toppings including sour cream, guacamole, cheese, and salsa. Although the prep and cook time for this meal only takes about 20 minutes, your family will be sure to linger at the table much longer as they each put the finishing touch on their fajitas.
Sunday:
Utilize your slow cooker this Sunday so you can spend extra time with your family before the week starts without worrying about fixing dinner. Try this Slow Cooker Chicken Tortilla Soup from Baked by Rachel.
