- 1 pound fresh spinach
- 2 cups (1 pint) sliced strawberries
- 1/4 cup fresh tarragon, chopped
- 1/4 cup small red onion, thinly sliced
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon lemon juice
- 1/2 teaspoon dried tarragon
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup (2 ounces) almonds, sliced
- In a large bowl, combine the spinach, strawberries, fresh tarragon and onion.
- Toss to mix well. Set aside.
- In a jar with a lid, combine the vinegar, honey, olive oil, lemon juice, dried tarragon, salt, pepper and 1 tablespoon of water.
- Screw the lid on tightly and shake to mix well.
- Pour the dressing over the salad just before serving.
- Toss to coat. Garnish with the almonds and serve.
