Chef Laura’s April Fool’s Day Menu

Not many people know this, but I am a huge April Fool’s girl, much to the annoyance of my parents and my husband.

Sorry in advance, Ricky, but this year is going to be filled with amazing pranks. As a chef, I love performing culinary trickery, and now Dream Dinners is making it so easy for me! Check out my menu of food pranks for April Fool’s Day this year:

Main Course: Meatloaf “Cupcakes”

This year I am planning a whole April Fool’s Day dinner. Luckily on our March Dream Dinners menu, we have our Cheddar Filled Mini Meatloaves with Cheesy Stovetop Cauliflower. This meal is perfect because we are already making mini meatloaf cakes, which gives us a cupcake shape. Now for the “icing,” I simply take our seasoned mashed potatoes (available in our Sides & Sweets Freezer) and place them in a piping bag with a fitted nozzle. Once the meatloaf cupcakes are out of the oven and cooled, I pipe the mashed potatoes in a swirl like I would regular icing. To make this even more believable, I like to bake the meatloaf in a cupcake wrapper!

Side Dish: Pound Cake “French Fries”

Next for our meal, Ricky loves French fries ever since we got an air fryer, so naturally, I will use this to my advantage. Instead of potatoes, I will use pound cake as my fries, cutting them crinkle style and toasting them in the oven until they get a bit toasty. For the “ketchup,” I will use a raspberry compote to finish this perfect sweet prank.

Dessert: Chocolate Covered “Bananas”

Now the final prank is not for the faint of heart. Ricky loves frozen bananas on a stick covered in chocolate, and we enjoy them regularly. But for April Fool’s Day, I will make them using kosher pickles instead. They can still be easily pierced with a stick and dipped in chocolate. For the pièce de résistance, I will also cover them in sprinkles; no one can resist sprinkles! This will be the perfect end to a night of foodie pranks.
