I’m excited to share a retired Dream Dinners recipe that your family will love!
This savory meal is a twist on a classic Italian entree. Enjoy bacon-wrapped chicken breasts in a velvety sauce – serve over egg noodles and pair with a green veggie to round out the meal. Feeling creative? Swap out the bacon for prosciutto!
– Chef Laura
- 6 chicken breasts
- ½ tsp. kosher salt
- 2 tsp. dried sage
- 2 tsp. Italian seasoning
- ½ tsp. black pepper
- ½ cup buttermilk
- 1 tsp. chicken base
- 1 tsp. cornstarch
- 1 tsp. garlic
- 4 Tbsp. lemon juice
- ½ cup water
- 6 slices of bacon
- 12 toothpicks
- 2-24 hours before cooking, place chicken breasts in a shallow dish and add kosher salt, sage, Italian seasoning, black pepper, and buttermilk. Cover with plastic wrap and place in the fridge to marinade.
- With tongs remove each chicken breast from the marinade and wrap slices of bacon around the chicken without overlapping, secure ends with toothpicks.
- Spray large skillet with nonstick spray. Over medium-low heat, brown the bacon-wrapped chicken for 5-6 minutes per side or until the bacon crisps.
- In a small bowl, mix together the chicken base, cornstarch, garlic, lemon, and water, then add it to the skillet with the chicken. Turn the chicken, so it becomes fully coated in the sauce. Cover and let simmer for 7-10 minutes (internal temperature of 165°F) until the sauce is bubbly and thickens.
