Preheat oven to 375°F and spray a baking sheet with nonstick cooking spray.
Remove chicken breasts from marinade and place on a cutting board. Cut each into bite-size pieces, then add a few pieces at a time into the bag of breading. Toss in the bag to coat, then place the breaded pieces on the sprayed baking sheet. Repeat this process until all the chicken is cut up and breaded.
Spray chicken with cooking spray, then bake 8-10 minutes (internal temp. 165°F).
Meanwhile, add white wine cream sauce to a medium saucepan, and bring to a boil. Reduce heat and simmer on low, whisking occasionally. Cook for 5-6 minutes, until sauce, begins to thicken.
Place the heated sauce in a small serving dish for dipping. Serve chicken bites with toothpicks or appetizer forks.
