You put it into the center of the meat, don’t go all way to the bottom and not to the edge, just to the center and hold it for about 20-30 seconds until it stops moving. It stopped and it’s done.
You can see it is in the center of the meat, not touching the bone, not touching the pan and you can see the temperature is perfect(170 degrees). Now I am going to let it rest for about 5 minutes before I cut it and it will be wonderful.
