Instant Pot: Hawaiian BBQ Chicken with Pineapple and Peppers

Chef Laura has adapted the cooking instructions for this menu item so that even an Instant Pot newbie can feel confident in this method of preparing dinner!

Instant Pot Cooking Instructions

Thaw in the refrigerator.

  1. Set Instant Pot to SAUTE. Add 1 Tbsp of oil to the bottom of the pressure cooker.
  2. Sprinkle rub mix over chicken breasts and brown chicken 3 minutes per side.
  3. Add BBQ sauce, pineapple and vegetable mix, and ½ cup of water to cooker, coating seared chicken breasts. Seal the cooker and make sure the pressure valve is closed. Set to HIGH pressure for 10 minutes, after 10 minutes do a quick release of the pressure, the chicken should have an internal temp of 165°F.
  4. Serve immediately.
