Instant Pot: Roasted Tomato Soup with Grilled Cheese Bites

Instant Pot Cooking Instructions

Thaw in the refrigerator.

  1. Set Instant Pot to SAUTE. Add 1 Tbsp. of oil to the bottom of the pressure cooker. Add onion mixture and sauté for 3-5 minutes or until the onions soften and become translucent.
  2. Add tomato base to onion mixture and stir well to combine. Then add 2 ½ cups of water to the pot. Pressure cook on HIGH for 4 minutes. Leave on natural release for 5 minutes and then manually release any remaining pressure.
  3. Meanwhile, prepare and assemble Grilled Cheese Bites as per provided cooking instructions.
  4. To finish the soup, add the bag of half & half. Stir to combine. Ladle soup into bowls and serve with grilled cheese bites on the side or on top.
