Leftover ideas for some October Menu items

Here are some great ideas that can add a little creativity to your lunch menu or a second dinner.

Autumn Pot Roast
French Dip or BBQ Beef Sandwiches

Thinly slice leftover sirloin and pile on a toasted French roll. Serve with au jus or BBQ sauce for dipping, and steak fries.

New Orleans Jambalaya
Gumbo

Mix leftover Jambalaya together with chicken stock to make a delicious gumbo. Add other meats or seafood such as clams, mussels, pieces of fish, diced chicken, and maybe some okra.

Steak Gorgonzola
Pasta

Cut cooked steak into small pieces and toss with sautéed wild mushrooms and asparagus, fettuccine and leftover Gorgonzola butter, for a great, quick, pasta meal.

Toasted Pecan Chicken Breasts
Asian Salad

For a quick & delicious salad place crisp chopped romaine in a large bowl. Garnish salad w/ sliced, cooked chicken, diced red & green peppers, green onion & orange slices. Drizzle with your favorite Asian salad dressing.

    Love these tips! Usually my husband and I take any leftovers to work for lunch. It’s a great way to save money by not buying lunch and it’s the perfect portion size too!
