Leftovers – Sandwiches and Salads…

Here are a few delicious twists for a lunchtime sandwich or salad. Featured dinners from this month’s menu: Steak with Garlic and Herb Butter, Chateau Chicken with Almond Butter Sauce, Market Salmon with Corn Medley and Orange Asian Chicken.

Steak with Garlic and Herb Butter
Sandwich

These steaks make a great steak sandwich. Grill the steaks, slice them against the grain and use the herb butter on a Chef Touched Rustic Country Roll. Layer with steak slices and a thick tomato slice.

Chateau Chicken with Almond Butter Sauce
Salad

Try this served over a bed of fresh baby spinach leaves for a colorful treat. Drizzle warm almond butter sauce over the chicken onto the fresh spinach. It wilts the spinach and adds a wonderful flavor.

Market Salmon with Corn Medley
Cold Salmon Salad or Salmon Sandwich

If you have leftovers this makes a great chilled salmon salad. Just mix the corn with the salmon with enough mayo to hold it all together, season it to taste with salt, pepper, and some chopped green onions. Delicious served in a croissant.

Orange Asian Chicken
Salad

This is good served cold too! Chill it, then slice and serve over a bed of fresh greens, mandarin oranges, and sliced almonds for a delicious Asian Chicken Salad.

    The word “leftovers” is a plural, and should not have the apostrophe. An organization like Dream Dinners should not have a printed mistake like that !
